Tom Lewis: Tom was inspired by two people – Nico Ladenis who enthused about food on Desert Island Discs, and David Wilson of the “Peat Inn” in Fife. By the end of 1996 the hotel had won its first AA Rosettes and Tom and Monachyle Mhor have continued to rake in the awards ever since.

Maxine Clark: Over 25 years experience in the culinary world. After gaining an MA Hons in Fine Arts and Medieval History at St Andrews University, she decided she wanted to cook! She trained as a chef (gaining a distinction) at the world-famous Leith's School of Food and Wine in London where she rose to senior teacher and demonstrator.
